Captain Tom Moore, a beloved United Kingdom (UK) icon, passed away on February 2, 2021. A British World War II veteran, he was at home in April 2020, when he started a fundraising effort that grew to a worldwide phenomenon. The UK was in the midst of a dark time with a national lockdown of homes and businesses due to the pandemic, and since Captain Tom Moore was grateful for his recent care during hospital stays he wanted to raise money and spirits of the National Health Services (NHS). Captain Tom would begin a 24-day campaign branded “Tom’s 100th Birthday Walk for the NHS”. The funds would go to NHS Charities Together which supports the NHS. Have you ever seen a coyote and badger hang out, play, and travel together? Well, neither had we until now. Peninsula Open Space and Trust is an organization in California that preserves and protects open space in San Mateo, Santa Clara, and Santa Cruz counties. In February 2020, they captured extraordinary footage of two species working and playing together and the video went viral. We loved the video and found others on their site. Valentine’s Day is for lovers, friends, and families, including furry ones. Popped into a local Homegoods store today to check out what’s available for the holiday. Scallops and Grits with Wilted Spinach Dinner idea I saw posted by my friend, Nancy. We love scallops and grits so what's not to love? Paired it with my favorite wine. 1 lb. Scallops3/4 C Stone Ground GritsLemon juiceButter1/2 Bag Spinach leavesSalt as preferred Cook grits same time as searing scallops to keep them hotHeat a large saute or frying pan on a high setting. Add butter and allow it to melt, and then add scallops. Clump scallops together. We added a splash of lemon juice to each scallop. You can add more according to your taste. Cook until light golden with a little searing on each side. Place them in a glass cooking dish and place in low heated oven to keep warm while you cook the spinach. Place spinach in the scallops' reduction in pan. Coat all of the spinach with the reduction. Spinach will wilt quickly so…

What amazing talent she has and she made history today. One to listen to in the years to come. Gorman made history on Wednesday by becoming the youngest person ever to write and recite a poem during an inauguration.
