I grew up with soup as a dish and comfort food. We'd eat it any day of the year, but it's especially good in colder weather. My husband and I really like the fajita stew recipe we found for the slow cooker. It's very easy to make and combined with rice or noodles it makes an entire meal in itself.
Fajita Stew

20 minutes 6 to 8 hours
Ingredients
- 2 lb boneless beef top-round steak, fat-trimmed
and cut into 2” pieces - 1 onion chopped
- 2 Tbsp fajita seasoning mix
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 red bell pepper, cut into 1” pieces
- ¼ cup flour
Directions:
- Combine beef and onion in slow cooker
- In medium bowl, mix fajita seasoning with tomatoes. Add to cooker and top with pepper.
- Cover. Cook on low 6 to 8 hours, or until beef is tender.
- In small bowl, combine flour and 1/4 cup water. Stir well to mix and gradually add to cooker. Cover. Cook on high 15 to 20 more minutes or until thickened, stirring occasionally.
Suggestions:
We like to eat it in soup bowls over rice with crushed tortilla chips, cheese, and sour cream. You could serve it over egg noodles. grits, or another pasta. Add additional veggies. Change meats with chicken or shrimp. Make it spicy or mild, according to your taste. It's a good base entree.
